Trends in Food Science and Technology is the international peer-reviewed mini-review journal in its field. It provides all those concerned with food science and technology with concise and critical synopses of important advances from across the full spectrum of food research. Its role is to fill the gap between the specialized primary journals and general trade magazines, by focusing on the most promising new research developments and their current and potential food industry applications. Papers from IUFoST symposia in Prague are included in recent issues and a special TIFS publication is forthcoming, devoted to papers from the 2007 IUFoST Shanghai symposium.
